I was on a self-catering holiday and into the last day of using up groceries. Roasted the garlic so it wasn’t as sharp. Potatoes, lashings of olive oil, lemon juice, lemon zest, spring onions/scallions.
Is also great made with slightly stale bread instead of potatoes, and can be eaten either hot, or cold.
I replaced 1/4 of the instant mix with tapioca flour. The texture is crispy and chewy. Would have been perfect with strawberries, blueberries, and bananas.
Super easy and delicious. Way too much for two people though!
This might sound like a stupid question, but I have never been a fan of spicy food, and though I try to increase my tolerance, I just can’t get it. I completely understand wanting your food to have flavour, and enjoy heavily seasoned foods. I just cannot for the life of me understand what capsaicin contributes to the flavour of food besides making it hurt your mouth? Why would you seek out to consume a product that is called “asshole destroyer 9000”?
Yummy
I spent all of yesterday making chicken broth out of rotisserie chicken, then wanted to use some of the chicken meat for burritos. Soaked black and pinto beans (separately) for 12 hours before boiling for several hours today. Turned the pinto into homemade refried beans (open to all tips, tricks, inputs, and judgements), then seasoned the black beans in a southwest seasoning I found online. Seasoned chicken the same. Made corn and bell peppers to add in. For the refried beans I did cumin, chili powder, onion, hatch green chiles, and lime. I basically eyeballed and tasted everything because the recipes were for much lower amounts. My biggest struggle is truly the refried beans.
White queso, Hatch chiles, black beans, pickled red onion, tomatoes, cilantro, and chipotle ranch crema.
