Backstory: On my wife's and my 3rd wedding anniversary over 30 years ago, our good friend Chef Renée prepared a special meal for us. He called it Beef Rochambeau and it was delicious, but that's not what this community's about.
He also wanted to make us something sweet to help us celebrate. He apologized as he served us a Cherry Stuffed Cheesecake. It had collapsed in the center from the lack of body from the cherry filling. Nonetheless, it was delicious. I thought this incredible dessert idea deserved another, more considered approach.
I knew the cake needed structure around the cherries for it to maintain form. To this end I created a geometric pattern designed to layer as many cherries into the cake as possible--without allowing individual cherries to touch so the cake wouldn't collapse. With a steady hand and a toothpick, I set the cherries into the half batter I had prepoured onto the chocolate graham crust. (This time, I tweaked it and placed a single semisweet chocolate chip into each cherry in the design.)
Once the lattice was created, I spooned the remaining batter over the cherries to lock in the lattice underneath.
I apologize if I cheated by using multiple pix, but thought the process to be important.
FYI ingredients may be somewhat difficult to get but otherwise pretty simple
For the Mochi itself:

one 16 oz can cranberry sauce, one 14 oz can sweetened condensed milk, one 8 oz package cream cheese, one teaspoon lemon juice, one teaspoon vanilla extract.
blend in a blender until smooth and then pour into a graham cracker pie crust and freeze overnight.
Mom’s recipe, one of my favorite Armenian sweet snacks! Although it’s actually not too sweet, light in sugar, plus cinnamon, walnuts, vanilla, and brandy 😋

・Fresh cream: 100cc ・Hojicha Powder: 1 packet (6g) ・Sugar: 40g ・1 Egg
