(healthy portion for 1 person; approximate measurements since I just made off the cuff, and of course amounts can be adjusted to taste)
Ingredients
2oz maifun rice noodles, cooked
1/3 large cucumber, sliced
1 roma tomato, sliced
3oz edamame (frozen, par-cooked), cooked and shelled
3oz surimi (thawed)
Sauce:
1 1/2 tbsp peanut butter
1 tsp black pepper
1/4 cup sweet chili sauce
Instructions
Boil maifun, with edamame, in about 2 cups water, for about 5 min (until noodles are translucent and soft).
While noodles and edamame are cooking, chop or slice cucumber and tomato, place in a bowl, sprinkle black pepper on this. Break up surimi into bite sized pieces and add to bowl. Pour about half of the sweet chili sauce over veg and fish.
Once noodles are soft, drain any excess water, leaving just a little. If you used edamame in pods, carefully remove the pods, leaving beans in pan. Then, stir peanut butter and remaining sweet chili sauce into the still warm pan to blend the sauce.
Let noodles, edamame, and sauce cool to room temperature. Blend cold items and cooked. Eat immediately or chill in fridge for 30 minutes or more.
Can be made one day ahead; noodles will get hard if stored longer than a day.
Cost estimated $3.00 (based on percentage of ingredients, most purchased on sale)
