Ririka Tanabe's Chili Spiced Chicken Wing (Authentic Chinese Cuisine)

I heard Ririka Tanabe likes spicy food like buffalo wings so, I indulged. I originally had more wings but forgot to photo them.

On the plate, besides the wing, is spicy fish, spicy chicken feet and bbq pork.

Crispy on the outside

Sup wingmen and wingwomen, does anyone have a method for cooking wings at home in an air fryer or an oven? I'm trying to make them crispy on the outside, but not burnt on the inside. I want to avoid frying them in oil but not against using oil, etc...

My wife and I typically just burn the hell out of them and love them, but we have guests.

Thanks!

Deep fry / rest / vacuum seal / freeze / air fry to finish / Is this a good idea?

I’ve got 8lbs of Costco “party wings” in the fridge, drying out. I’ve got them covered in equal parts salt/baking powder/corn starch. My plan is to deep fry them tomorrow. I was thinking of keeping the oil to 250*-260* and cooking them until their internal temp comes up. Then, I planned to let them rest, vacuum seal and freeze them in 1lb packs that the kids can grab and throw in the air fryer as needed.

We do those Foster Farms takeout wings in the air fryer, quite a bit. I do those at 360-370 for 12 minutes. Flip them and do them for another 6 minutes at 400. They turn out great every time.

Should I treat these the same? Mine aren’t coated in rice flour like the foster farms ones, but will that make a huge difference?

Any help would be greatly appreciated!

Stonewall is my new favorite sauce

I've made wings with dozens of sauces and Stonewall is way up there! Great viscosity, good flavor, buttery, and is less vinegar forward than others. Most of all it has much more heat than 90% oof what I've had. No need to add hot sauce!

First time homemade wings

Would like to be able to save money making my own wings at home, I really like the Spicy Korean sauce Wing Stop makes and was hoping I could get help making my own sauce at home or finding a bottle of that I could adjust accordingly. I also like mango habanero sauces, love the sweetness with a bit spice.

Disgraceful wing "promotion"

Chicken wing "deal" at a Canadian pizza chain.

Probably the worst looking wings I've ever seen advertised. This is like reverse advertising.

"Get your sawdust wings at the usual going rate for a limited time only - limit twelve per sap!"

Seriously though, who has the best dry wings in Oakland area?

I've seen a lot of responses about the East Bay wings, and I've tried most of them and was never really that impressed. I need real answers here people.

Left side: white miso mango habanero. Right side: Birch Syrup and Burbon

Dry brined with salt and baking powder for about 18 hours. Smoked for an hour at 225. Broiled until crispy. Tossed in the sauce and then one more pass under the broiler.
