How to storage spawn for 1/2months??

Found some near perfect chanterelles right next to the side of the road today, is it normal to see them this far into winter?

Beginner Grower [technique]
I know nothing. Teach me everything. I want to grow baby bella. I know oyster seems to be the starting point for most, based on my research but I'm not interested.
