Hey all! For a while Ive been on the keto diet and decided to try out the vegan. What food items should I be having on the daily? Dont really want to have brown bread though but could probably stick to pastas.

Okay so I recently went vegan about 4 days ago. Here is what I noticed thus far. When I do eat, I get full fast before I can finish my plate so I just stop eating all together. Also my water intake has increased and I barely crave juice or soda anymore. I always drank water but it wasn’t consistently with every meal. But after very meal I crave water. I wonder if anyone else feels this way
So for a few years ive been borderline underweight with alot of nutritional deficiencies. (5’10 129lb male) short story is i had a extreme poverty patch, lost about 20lb in a month and got some kind of anorexia ( i lack a physical appetite and get full easily) ive been wanting to transition to a vegan diet since i tried high calorie foods (fast food, beef etc) and it always tore my stomach up and hust made me feel like shit. But i havent been able to make a meal plan that was small enough while getting 2800-3000 calories without lacking in several nutrients or having a potentially lethal amount of manganese. Trying to make large amounts of food ended up falling similarly short. I still dont have really any wiggle room and was wondering if anyone knows what i can do to reach the calorie intake and meet my dv’s. Preferably without saying eating a wide range of colorful veggies as that doesnt help me at all. I just need a single day plan that i could eat daily. I appreciate any help.
So, I have been thinking about going vegan for some time now, but I don't know how to maintain a balanced diet. I have celiac disease (so no gluten allowed), I'm allergic to soy and have had issues with anemia throughout my life. How could I design my diet so that it is both vegan and suitable for me taking into account my health issues?
