Lately, I've been meal prepping a lot to gain time during the week but I want to make sure I've get enough different recipes. Where to you get new recipes ideas ?
In this sub? Did you join some kind of meal prep subscriptions, that send you groceries list every week? (I've seen that online)? Another way?

So I'm new to meatless cooking. I eat meat a few times a week and generally have a take it or leave it stance on it. My husband has been vegan and vegetarian before but currently isn't. My interest with meatless cooking is that two of our children have issues with meat and our middle child desires a vegan meal plan.
Both of the children are on the spectrum, as is my husband, and there are food sensitivities regarding textures and smells.
My youngest is practically a fructivore and my eldest could put a dairy farm out of business with their dairy consumption. It's a struggle getting them to eat meat and to increase their protein.
One of their comfort foods for both of them however is hamburgers. It doesn't matter where it's from so long as it is a hamburger. However they will not eat hamburger meat in other dishes.
My mother a bunch of lasagnas for me at the start of the summer and my children devoured them. They loved them. They're taking a different stance on hamburger and I'm grateful.
Unfortunately, my middle child has decided that they'll not consume any meat for ethical reasons, which I don't shame. I would understand it if the products were commercially produced but the animal products in our home come from animals that our family or extended family raised and have had amazing lives. That's neither here nor there. I'm gonna honor that and respect their wishes, accommodating it as best we can. We always have stores of PBJs made up in the fridge and we have a stocked salad bar in the fridge, so she'll never go hungry.
My middle child is a darling and loves to cook with me. They commented about wanting their grandmother's lasagna but using a meat substitute. We ended up picking up a small bag of TVP when we were at Target the next week and tried it. It was wonderful and it was a smash hit with the kids.
Unfortunately, it is out of our budge to replace the beef we use with TVP if I buy small bags.
I found large amounts of it and it's viable, but I have concerns in textures after freezing. I do meal prep every three days with my Middle and I don't have the time, energy, or spoons, between being disabled myself and raising two children who are on the spectrum and have serious issues.
If I buy it in bulk, I'm going to replace my ground beef in pretty much everything. I've already made burgers with what was left over from the Lasagna experiment and the burgers were eaten joyfully.
It'll be next month before I'm able to try out any more experiments with TVP as I won't be able to get to a Target, which is the only store that has it, that I can find.
I've told my husband about all of this and he is fine with me totally replacing our ground beef with TVP in all my recipes.
How does TVP fare after being frozen? What is the texture like? I want to make sure kids each have their needs and wants met here.
I primarily make stroganoff, lasagna, bolognese sauce, hamburgers, and tacos.

If not, why not? It makes me nauseous and ruins my appetite every time I see an burger ad, and I've been at this over a quarter century, I'm not going to buy one! /mini-rant.

Bear with me as its my first time cooking. I am vegetarian and love tofu. I want to make a marinade. Most recipes I see marinade it with garlic,soy, sesame oil, rice vinegar. Then bake it. Is there anything I can add to marinade to make it spicier?
1.) I would prefer to air fry. Does anyone know if that is better. Say I bulk marinade it, how long and what temp do I put it in airfryer to cook so that it is firm and chewy inside and crispy outside?
2.)I understand cornstarch makes it crispy, but does it make sense to cover it in constarch while its wets from the marinade?
3.)Also people say that freezing it gives it a better texture where the tofu becomes more dense but you have to let it thaw before cooking, any way I can implement all this in an efficient way? And would it even work? End result should be dense chewy tofu with crispy exterior and has a ton of flavor.
4.)Also what is your guys go to for using that tofu in besides rice and noodles. I need something really filling. I am not too worried about calories, more the merrier, but preferably not too heavy on carbs. More protein the better
