Overcooked gnocchi with a butter sauce that I put too much mustard into

Sweet potato gnocchi with brussel sprouts and butter sauce with mushrooms, shallots, garlic, and sage. It was tasting great till I decided to add a little mustard and put way too much, so it was basically a mustard sauce with butter

Yachaejeon-Okonomiyaki-fusion...I guess

Vegetables inside are carrots, peas, broccoli and scallions. The dark shiny thing is a mixture of ketchup and vegan oyster sauce. "Decorated" with furikake, mayo and scallions.

Pro tip: If you put the mayo into a freezer bag and cut off a tiny bit of a corner...it doesn't work very well.

£12 box of sweet potato chunks that were raw and even the seagulls spat out

The menu said 'crispy potato wedges' pls what it this 😭😭 we got back to the campsite after a walk and the seagulls broke into the box and SPAT THEM OUT ALL OVER THE TABLE LMAOO

my hospital meal everyday for 8 days while i'm recovering from thyroid cancer surgery

i've had to be put on a 0 fat diet because of some complications with my surgery which means the foods i can eat are VERY limited, even more so are the foods the hospital can make for me. literally the only things i can eat are jacket potatoes, mixed veg and baked beans. i am so miserable. i crave sauce.

Ratatouille with Potatoes! (Recipe in description)

I used AI to help me format this recipe for you. The only thing I did differently was choose to leave out the onions and garlic (though it would be great with it - I was cooking for someone with a sensitivity) and the only herb I decided to use was thyme. And I used more zucchinis and more potatoes and left out red peppers.

Please excuse the paper bowl! We were staying in a hotel at this point with nothing but a crockpot! Which btw, yes it works great in a crockpot!

Ingredients

  • 1 medium eggplant, diced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 red bell pepper, diced
  • 1 yellow or orange bell pepper, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium potatoes, diced
  • 3–4 ripe tomatoes, diced (or 1 can diced tomatoes)
  • Salt and pepper, to taste
  • Fresh thyme,
  • optional: rosemary, and/or basil

Instructions

  1. Prepare the Vegetables: Dice the eggplant, zucchini, yellow squash, bell peppers, potatoes, and tomatoes. Chop the onion and mince the garlic.

  2. Steam-Sauté the Vegetables: In a large pot or skillet, add the onion and garlic with a splash of water. Cook over medium heat, stirring often, until the onion softens, about 3–4 minutes. Add a bit more water as needed to prevent sticking.

  3. Add Potatoes and Eggplant: Add the diced potatoes and eggplant, and cook for about 5 minutes, adding a bit of water if needed to prevent sticking.

  4. Add the Rest of the Vegetables: Add the zucchini, yellow squash, bell peppers, tomatoes, thyme, rosemary and basil (if using), salt, and pepper. Stir well, cover the pot, and reduce heat to low. Let simmer for 30–40 minutes, stirring occasionally, until all the vegetables are tender and flavors have melded.

  5. Adjust Seasoning: Taste and adjust salt and pepper as needed. Garnish with fresh thyme, rosemary, or basil, if desired.

  6. Serve: Enjoy warm as a side dish or as a main course.
