Vegetables inside are carrots, peas, broccoli and scallions. The dark shiny thing is a mixture of ketchup and vegan oyster sauce. "Decorated" with furikake, mayo and scallions.
Pro tip: If you put the mayo into a freezer bag and cut off a tiny bit of a corner...it doesn't work very well.
First time making vegan cheese, I'm really happy with how it turned out y'all. Was too lazy to actually make chili so I just roasted some walnuts and threw them on top lol

the sausage is plant based apple & sage sausage by field roast... pretty good. my boyfriend who is gradually cutting meat out of his diet likes them too.

i've had to be put on a 0 fat diet because of some complications with my surgery which means the foods i can eat are VERY limited, even more so are the foods the hospital can make for me. literally the only things i can eat are jacket potatoes, mixed veg and baked beans. i am so miserable. i crave sauce.
I used AI to help me format this recipe for you. The only thing I did differently was choose to leave out the onions and garlic (though it would be great with it - I was cooking for someone with a sensitivity) and the only herb I decided to use was thyme. And I used more zucchinis and more potatoes and left out red peppers.

Let simmer for 30–40 minutes, stirring occasionally, until all the vegetables are tender and flavors have melded.
Adjust Seasoning: Taste and adjust salt and pepper as needed. Garnish with fresh thyme, rosemary, or basil, if desired.
Serve: Enjoy warm as a side dish or as a main course.
