My top choice is Chimera Falin vs Adam Smasher! With her magic, I think she can see and hear Johnny Silverhand's soul and everyone else who has died in Night City.
Hot take: I believe Laios and his party with Izutsumi would survive Night City, they learn about the street food culture and actually try their best to be friendly with everyone there!
I would also love to see the Little Witch Academia crew versus The Arasaka Corporation!
Who from all of Studio Trigger's IP would you love to see fight or argue with each other, this can include Gurren Lagann!
I'm a big Trigger and Imaishi fan, but I've noticed that a common opinion among anime community is that Trigger's stories lack in quality. I personally don't think they're bad, just told in a absurd way with lots of symbols (take Kill La Kill and Promare as an example) for you to think about it later and enjoy the ride
