I also found vegan smokey chipotle sauce at the store 😋
I drenched w the sesame and spicy sauce after this was taken.
Called the provoleta burger it’s a Beyond patty with provolone, chimichurri, herbed aioli, and pickled onions on pillowy toaster ciabatta bun. Most folks would go with the fries, but I went with seasonal vedge, which turned out to be asparagus with garlic and lemon. Note as well the Thai O’cha in the background, which is basically an upgraded Thai Iced Tea, with orgeat and passion fruit and yellow pepper juice (it works, trust me). Comes with rum or without, this time I went without.
I usually just make this with avocado but added the tomato today and it was BOMB. A lil salt, pepper and nooch as well of course

First time trying bellflower root! Has a similar texture to burdock root. Can be purchased at your local Korean grocery!
Sushi rice:
Put top on pot and cook rice until boiling, turn down to lowest setting for 10 mins. After 10 mins take off burner and let sit with lid on for another 9 mins.
Put in glass container to cool while you slowly pour in your vinegar/sugar mixture while fanning.
For the sushi.
Cashew cream base with tofu crumbles, mushrooms, and bok choy.
