Does churro dough sweat?

Hey guys!! I love my churros but I have a question for all you. Why is it that when I make a batch of churro dough and want to save it,to cook it later. The dough basically disintegrates in the oil? So if I make the churros right away they are fine this only happens when I save it. Does the dough sweat? Or what happens to the dough when it is left to sit? Thanks guys

Would like a churro maker for home use. Any suggestions?

I've tried the pastry bag and star tip approach and failed miserably. Thinking about getting a churro maker, where the dough is churned/pumped out of a tube. Saw some on Amazon by Bernar that were affordable. Anybody used these before or have suggestions? Not trying to spend a fortune either.

Are churros made in really unsanitary conditions?

They sell them in the subway in ny and they go for really cheap. But I was wondering if it was worth buying them if they were made in like gross kitchens or something. I really don't want to catch Ebola
