Fresh Crack! (Not that kind)

Finally got around to cracking open this new store pick Knob Creek, and I probably should’ve let it open up a bit first. It’s drinking a little hotter than the 120 proof on the label, but I’m hoping it settles down after some air time. Still, getting those classic Knob Creek caramel and oak notes, just with a bit more bite than expected.

Anyone else notice certain picks needing more time to open up? What’s your go-to method—let it sit in the glass, give it a few weeks, or just power through?

New Bourbon Company slaps - Peter E Hart

Found these bottles in Louisville and gave it a try. Both are surprisingly incredible. The Wheated Bourbon is top notch and the rye is very unique. Loving this crafters pallet.

Allocated Drops

So I’ve been drinking bourbon for the past six years or so and looking to collect more allocated bottles. Does anyone know how I can find out who has allocated bottles in Clarksville, Tennessee? Is there a website or something convenient? Is it as simple as going in a store and asking? Looking for the “inside scoop” so to speak. (The photo is a drop I went to recently and my current location, not Clarksville)

Just opened a wedding present

Wife and I were celebrating and finally opened this guy. Still have another bottle from the wedding to open. The Taylor was a gift as well and been open, there's also a 2023 Makers BEP I got while on a tour, Jack Daniels single barrel/barrel proof I got on a tour, and a signed Bardstown origin series signed by the head distiller.

And yes, that is Canadian Club, but from 1976 and still a quarter of a bottle left as I've done samples. Got it years ago and like the nostalgia.

The 18 year had a hint of peat with a more cherry sweetness to it than a honey sweetness you get in some bourbons.
