A true Southern Kiwi delicacy, just missing the pineapple for the topππ
Now, hear me out, I am in no way trying to make light of mental illness. But, it is something I struggle with, and there are days where cooking a meal seems monumental, so I thought we could share some meal ideas.
One of my favorites is to grab a bagged salad, add whatever veggies I have on hand - or not - and cut up and microwave a sausage. My favorite is this chicken Gruyere and spinach sausage. It's already cooked, so it heats up in no time in the microwave. Then I drizzle some lemon vinaigrette on top, and add some cottage cheese on the side.
Another meal that I usually make several times a week for breakfast is a bacon egg and cheese bagel.
I toast the bagel, then I microwave 1 to two eggs in a bowl or egg cooker. I top with precooked bacon, and a slice of Swiss cheese, and microwave until the egg is cooked. Sometime I add some mashed Avocado - I buy the cups of it, so it lasts longer - and sprinkle with Everything But the Bagel seasoning.
One of my comfort meals is to boil macaroni noodles in chicken broth. When I'm sick, I crave it.

My friends are all doing a cookie exchange for the holidays and I want to do something with seasonal flavors thatβs fun and not just a basic ginger bread. Any ideas?
In my slow cooker is what my kids call my vegetarian chilli. However, it lacks many things that would qualify it as a chilli - mostly the heat as it started when my youngest was a toddler and I didn't want to over spice.
It's a fast and loose recipe that gets modified each time with what is on hand.
This dish includes:
Baked beans fried with corn Can of black beans SautΓ©ed options Minced garlic Tomato sauce Pepper, cumin, paprika, dash salt, dried basil
Is it just a thick vegetable soup?
I've recently made Bolognese, divided and froze it. I just ate my last batch yesterday and it got me thinking, what are some other similar dishes that can be made in a relatively large quantity, frozen and can easily(in 15mins or so) be warmed up and ready to eat.
For example with the Bolognese, i don't even have to defrost it. I just have to boil my pasta, drain it, put the sauce in the pan(can still be frozen), some pasta water, wait till it warms the add my pasta and boom, delicious food that tastes even better than the day it was made.
What are your go tos?
There was a layer of cinnamon in the middle but I didnβt split the batter so the two cake layers were uneven but it was still moist and delicious
