Cheeses without lactose and casein?

Lactose and casein are the most difficult parts of the cheese to digest. So, any suggestions?

Dairy, dermatitis & how I got free

I’ve been meaning to post something like this for a while now, but I wanted to be certain before I wrote anything. I’ve struggled practically my entire life with atopic dermatitis (eczema) and developed “seborrheic dermatitis” as a teenager, and it’s had a huge effect on my life. I was referred to a specialist practically from birth and was prescribed steroids from childhood, however these did nothing for me.

I was covered in large patches of eczema, particularly around my knees/elbows/back/face throughout my childhood and it was incredibly painful and limiting. As a teen I began to experience even more flareups and first ended up in hospital from a flareup in 2020. After lockdown I began experimenting with veganism (I’ve never really liked meat, but was cutting out dairy for weight loss) and noticed a significant improvement in 2021 to 2022. At the end of 2022 I got COVID and developed laryngitis, and basically lived off milkshakes because they were all I could consume.

Not long after I got into a relationship, but my skin issues continued. My partner at the time ate a lot of takeaway/chocolate so I was always eating dairy, but I wasn’t putting 2 and 2 together. I have allergic reactions to a lot of different things (pollen, dust, mould, certain fruits and nuts) and was convinced it was something in the house I was living in at the time.

I ended up with another massive flare around March and was prescribed more antibiotics and oral steroids to no result. I went back to the doctor and was just told to keep using antifungal products for the seb derm, which were also having no effect. By this point the cost of new bedding, air purifiers, countless different skincare products and everything else was adding up.

I moved out of that house, and my skin proceeded to get even worse. It got to the point I could barely even leave the house because my skin was so painful and my face was visibly inflamed no matter what I did. Back to the doctors, told to keep using moisturiser. Went to a dermatologist, prescribed an immunosuppressant, no change. Multiple courses of oral antifungals, nothing. By January of this year I was entirely beaten and almost ready to give up.

My diet is fairly limited but I tried an elimination diet; first was gluten and nothing changed. Then sugar, and nothing changed. And then dairy. At first, nothing major but after a few days I felt different. It was difficult to give up the dairy again (I’d decided strict veganism was too restrictive and gone overboard on the cheese as a result) but after about a week things felt entirely different.

Since about March I’ve been almost entirely dairy free and the results are like clockwork. If I avoid it, my skin is back to being almost completely fine. No more red patches, no bumps, no constant irritation from sweating and my face is entirely clear (I had to shave my head last year from how bad my scalp felt). I use regular shampoo now and my hair is coming back thick and healthier, and the only skincare products I need now are a simple cleanser and moisturiser.

I can’t believe it took me so long to put two and two together, but my reactions to dairy do feel different to other allergens. With others I can usually tell within the first couple of bites, but I can eat an entire pizza and not react until hours/days later. I also don’t get the itching eyes/tingling tongue and ears with dairy which made me assume I wasn’t allergic.

Unfortunately it’s not cured all of my physical symptoms (I still have pains in my joints, stomach issues and fragile skin) but a vast majority of the visible external symptoms are gone. I just hate that in all my doctors appointments not one of them has even offered me an allergy test and I’ve had to learn all this the hard way while wasting time and money on things I don’t need.

Although I definitely missed dairy for a while I’m missing it less and less these days.

Dairy Free Creamy Chicken and Wild Rice Soup

2 Cups cooked chicken cubed, (I like using a rotisserie chicken) 1 Large onion diced 1 ½ cups celery diced 1 ½ cups carrots sliced 8 Oz mushrooms, roughly chopped 5 cups chicken stock 1 Cup Ralston Farms Nature's Blend Rice or your favorite wild rice 1 ½ cups Dairy Free Heavy cream 1 ½ tsp kosher salt ¼ tsp black pepper 2 tbsp fresh parsley chopped ½ tsp garlic minced 1 tsp Thyme Leaves 1 tbsp olive oil

Heat the oil: Place a large pot over medium heat and add the olive oil, diced onion, and diced celery. Sauté vegetables: Sauté until the onions become translucent. Cook mushrooms and season: Add the mushrooms, carrots, salt, pepper, thyme, garlic powder, and additional pepper. Cook until the mushrooms are soft.

Add stock and rice: Pour in the chicken stock and add the rice. Let it cook for 20-25 minutes, or until the rice is fully cooked. Finish and simmer: Add the remaining ingredients and cook for an additional 10 minutes. Serve and enjoy: Once done, serve warm and enjoy!

Craving chocolate? Check no whey.

Enjoy life was our to go brand, but I am not sure what happened, they only produce chicolate chips and lentil chips, I already knew about no whey, but went back to check their website, thee have Amazon front store, they have dairy free "m&m", chocolate covered pretzels, chocolate bombs, chocolate bars, chocolate truffles, cups, etc. They're allergy friendly not just vegan for us with lots of allergies. As an allergy family Injust wanted to spread the word.

String cheese

I looked at older threads and found a few ideas. Most of the posts were older so wanted to see if anything has changed.

I’m looking for string cheese for my son. I know daiya has string cheese but can only find it at Whole Foods. Any other ideas on string cheese or Daiya the only one.

Best DF yogurt

Like many on this subreddit, I have been searching for the best dairy free alternatives, I have finally found a dairy free yogurt that actually taste like Greek yogurt that doesn’t have sugar or texture is more like pudding and most important to me the ingredients are short and simple. Protein would be the only thing it is lacking but I get a lot in my diet already and use this more as a dessert. Protein can be easily added and mixed in.

No offense but, what am I supposed to eat for breakfast?

I am in a location where not a lot of vegan and organic substitutions are available, and if they can be found, they're EXTREMELY expensive. I am trying to balance my PCOS hormone so I am trying to stop eating dairies but I haven't found a single recipe or an idea about a satisfying breakfast. Are there any suggestions that don't have very rarely found ingredients?

We have tried everything from soy, to almond, to coconut. Everything makes him have diarrhea. (He already has loose stools due to no large intestine) Any suggestions? 😊

Having a hard dairy free day

I got horchata and i was super excited but it had milk! I thought horchata wasn’t supposed to have dairy. I’m pretty disappointed, because I thought maybe it could be a switch from milk-tea because it was my favorite. I know i could technically make it without dairy myself but that kinda defeats the purpose for me to have an easy sweet treat. Im eating my sad cheese free sandwich now.

This slaps so hard

I was debating whether or not to buy cream cheese or butter (df, of course). I bought Miyoko’s plant based European style butter and it was gross. I threw it out. But after trying Kite Hill cream cheese in the past and it also being disgusting, I came across this at Trader Joe’s. Every day I put arugula, cucumber and plant based cheese on a bagel for breakfast. So I added the Boursin and omg, it’s so good. Legit the best thing I’ve eaten so far that’s non dairy.

Hi guys I'm new here

Do you guys know what pancake mix I can use? I have a milk allergy and sometimes I'm super paranoid of what I'm eating.

DF “milkless” chocolate covered shortbread cookies!

They are too delicious! I just found these at a nutrition store near me. If you see them, I would 100% recommend. A few family members tried them, one being a baker, and they all said they couldn’t even tell the difference!

Pudding

So I was reading the back of those instant pudding mixs. We all say the don't make it with soy milk it won't set. Well it will set. You just have to add about one cup or between 200-240 grams. Of your soy milk and it sets rather well. I have made a pudding pie and just the pudding on its own. Also too keep in mind. If you use unsweetened you have to add your sugar of choice to replace the sweetness that you would get from normal milk. About eight to ten grams.

Daiya Dairy Free Meatless Pepperoni Pizza 7/10 Recommend

It’s vegan and gluten free. I didn’t need it to be gluten free, but I don’t eat red meat, so the meatless pepperoni was a plus.

The cheese was a respectable substitute for real cheese. The cheese has both a melty parts and some unmelty parts, almost like they used two types of cheese substitutes- I did not get an oaty aftertaste like I usually do with oat milk products. The flavor is reminiscent of cheese and maybe processed cheese.

The pepperoni substitute has a nice tang that vegan pepperonis often don’t have. I took the pepperoni off half of the pizza before cooking it, in case I didn’t like it, so that’s an option if you don’t want the meatless pepperoni on it.

I didn’t even realize that the crust was gluten free until I took a picture of the box to share with you folks. The crust is thin and crunchy, very much like other thin crust frozen pizzas. To be honest, I don’t care for frozen pizza crusts in general but if you like them, I think you will like this one.

I would buy it again to eat when I don’t want to cook, but I would probably dress it up with olives or veggies.

These are good!

160 cals for the bag. I do not like the regular cookies from them, I think they’re gross. But the crunchy cookies are delish. They remind me of Tate’s Bake Shop cookies. Try them!
