What have I become?

I had a sandwich yesterday that was chock-full of raw onions without even asking and while I didn’t take a picture because I was too busy enjoying, all I could think was ‘this sub would LOVE this sandwich’.

Seriously though, one of the best sandwiches I’ve ever had- a Peruvian chicken sando- piping hot, spicy, the bread was soft and crispy, tons of onions and aioli, lettuce, tomato. It’s a special though so I’ll have to go get another one before the specials change.

The Bourbon Onion Bacon Jam journey begins!

Rendered 12 oz pack of bacon until crispy. Removed bacon bits from pan, leaving rendered fat. Added 6 1/2 large beauties, a healthy sprinkle of my all purpose seasoning (salt, w peper, b peper, smoked paprika, onion powder, garlic powder, oregano) and roughly 2 tbsp of brown sugar (i didn't measure 😅). Gonna caramelize the onions then readd the bacon as well as Bourbon, balsamic, and worcestershire. Will keep you peeps updated 👌

Didn't get enough onion from my spaghetti sauce so I slow-roasted some more. Gave me a deliciously sweet caramelized juice
