TIL types of cheddar and what's best for grilled cheese

The main differences between medium, old, and extra old cheddar come down to aging time, texture, and flavor:

1. Mild Cheddar (Aged 1–3 months)

---Smooth and creamy texture

---Very mild, slightly sweet, and milky flavor

2. Medium Cheddar (Aged 4–9 months)

---Firmer texture but still smooth

---Balanced flavor—mild but with a bit more sharpness

3. Old Cheddar (Aged 9–18 months)

---Drier, crumbly texture

---Sharper, more complex, and tangy flavor

4. Extra Old Cheddar (Aged 18–24+ months)

---Crumbly and drier with noticeable salt crystals

---Strong, tangy, nutty, and sometimes slightly bitter flavor

5. Vintage or Aged Cheddar (2+ years, sometimes up to 10 years!)

---Very crumbly and dry, often grainy

---Extremely sharp and bold, with deep umami and nutty notes

Best Chedda For Grilled Cheeser

Medium cheddar melts well and has a balanced flavor. Old cheddar adds more sharpness while still melting nicely.

Sassafras butter grilled cheese

I am thinking of creating my own sassafras butter and using it as the fat for a grilled cheese.

Softened butter Small amount of dried thyme Sassafras Grind a bit of black pepper

I was thinking a sourdough bread with gruyere and white cheddar? What do you guys think? Is my cheese pairing and bread choice all right or should I try something different?

Spread top ideas

As sexy as that sounds. I have a couple of ideas of making grilled cheese BUT spreading a different kind of spread on top and bottom bread. Smoked Gouda and Aged Sharp Cheddar on Sourdough

Inspired by loaves of Sourdough bread being brought to the shelves while we were at Publix last night. Title says it all! Butter not mayo, served with Tomato soup, simply delicious!

Is there a subreddit for grilled cheese+?

Hi all, Love me a grilled cheese, but is there any subs that do inspiration for grilled cheese with other additional ingredients?

My workplace has a sandwich press, and I’m looking to get a few more ingredients involved. I’ve already done cheese and ham, cheese,chicken, and avocado, pastrami, havarti and pickles, Turkey, cranberry and Brie….

If there’s any subreddits you know of that give inspiration, pls let me know!
