The main differences between medium, old, and extra old cheddar come down to aging time, texture, and flavor:
1. Mild Cheddar (Aged 1–3 months)
---Smooth and creamy texture
---Very mild, slightly sweet, and milky flavor
2. Medium Cheddar (Aged 4–9 months)
---Firmer texture but still smooth
---Balanced flavor—mild but with a bit more sharpness
3. Old Cheddar (Aged 9–18 months)
---Drier, crumbly texture
---Sharper, more complex, and tangy flavor
4. Extra Old Cheddar (Aged 18–24+ months)
---Crumbly and drier with noticeable salt crystals
---Strong, tangy, nutty, and sometimes slightly bitter flavor
5. Vintage or Aged Cheddar (2+ years, sometimes up to 10 years!)
---Very crumbly and dry, often grainy
---Extremely sharp and bold, with deep umami and nutty notes
Best Chedda For Grilled Cheeser
Medium cheddar melts well and has a balanced flavor. Old cheddar adds more sharpness while still melting nicely.
I am thinking of creating my own sassafras butter and using it as the fat for a grilled cheese.

I was thinking a sourdough bread with gruyere and white cheddar? What do you guys think? Is my cheese pairing and bread choice all right or should I try something different?

As sexy as that sounds. I have a couple of ideas of making grilled cheese BUT spreading a different kind of spread on top and bottom bread. Inspired by loaves of Sourdough bread being brought to the shelves while we were at Publix last night. Title says it all! Butter not mayo, served with Tomato soup, simply delicious!
Nice and simple, bread, butter, American cheese, and mozzarella. The cheese pull is amazing. And best of all, it cost me $5 for 2.

My workplace has a sandwich press, and I’m looking to get a few more ingredients involved. I’ve already done cheese and ham, cheese,chicken, and avocado, pastrami, havarti and pickles, Turkey, cranberry and Brie….
