Does anyone have any ideas how to recreate the mastro’s sautéed shrimp recipe?

For many years I have been going to Poke Bowl to get their sushi rice and steak with Siracha Aioli. I love their shiitake mushrooms the most, and have already tried to reverse engineer their savoury sweet umami taste (to moderate success).
What gets me is the Siracha Aioli. I know Siracha recently had a supply shortage but from what I can tell Poke Bowl hasn't changed flavor wise.
A couple of years ago I tried buying some Siracha Aioli premade, excited to put that sauce on more meals at home. It was AWFUL. Didn't taste anything like their Siracha Aioli. I tried to make it myself and couldn't get the ratios right.
My attempts were always too spicy, then too sweet, then too tangy... Etc. Based on my trial and error with the mushrooms, I tried other brands of mayo to no avail.
If there is any advice on how to go about this (and crucially, if anyone thinks it would be rude of me to ask the restaurant for their aioli recipe) please let me know.
It wouldn't impact how often I give the restaurant my patronage as they are still more convenient then me handling steak at home on a very busy day, I just want to put the aioli on my cheaper meals to enjoy it more often.
I am trying to replicate the Diana’s Milk Chocolate Covered Bananas. However what makes them so good is the chocolate (obviously). Does anyone know what type they use or a good substitute? I am trying to avoid spending $7 for a pack of 4. Thank you in advance!

I love the stuffed mushrooms from hideaway pizza and haven’t had much luck finding a copy cat recipe.
Ok, I’ve searched high and low. The gravy at KFC in Canada used to be VERY different than the gravy in the US. Their current gravy is a lot like KFC US gravy now, which is awful.
The old gravy was a thick, light brown almost greyish gravy with black flecks all through it, and it was absolutely delicious.
But, like all good things, they changed it years back and I’ve never found anything like it since.
Anyone know what I’m talking about, and more importantly, anyone have a recipe for it?

See's lists soy lecithin as their stabilizer. I have a bag of Avacream (guar gum, mono diglycerides, carrageenan).

As title states I am looking for the icing recipe that Cinnamonster uses. I have tried to search for it but have only been able to find Cinnabons recipes and while that is good, I am looking for Cinnamonsters. Which is a more of light whipped creamy texture and seems less glaze like than most cinnamom roll icing... thank you 😊

Does anyone have a copycat recipe for Johnsonville Sweet Italian Sausage? I've tried a few recipes for Sweet Italian Sausage but they had way too much fennel. I tried to dial it back but it messed with the ratio or something, it just didn't taste right. I like my Johnsonville! but I want to make it with our pork.
