Roast lamb & potatoes (in air fryer)
Servings: 4-6
Ingredients:
1 leg of lamb (about 2kg), bone-in
1.5 kg potatoes, peeled and cut into chunks
4 cloves of garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
4 tablespoons olive oil
Salt and pepper to taste
Preparation Time: 15 minutes
Cooking Time: 60 minutes
Instructions:
Preheat the Air Fryer: Preheat your air fryer to 180°C (360°F).
Prepare the Lamb: Make small incisions all over the lamb using a sharp knife. In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, 2 tablespoons of olive oil, salt, and pepper. Rub this mixture all over the lamb, making sure to get it into the incisions.
Prepare the Potatoes: In a large bowl, toss the potato chunks with the remaining 2 tablespoons of olive oil, salt, and pepper until evenly coated.
Cooking in the Air Fryer: Place the seasoned leg of lamb in the air fryer basket. Arrange the seasoned potato chunks around the lamb in a single layer. Cook at 180°C (360°F) for 30 minutes.
Flip and Continue Cooking: After 30 minutes, flip the lamb over using tongs for even cooking. Continue cooking for another 30 minutes or until the lamb is cooked to your desired level of doneness and the potatoes are crispy and golden brown.
Rest and Serve: Once cooked, remove the lamb and potatoes from the air fryer. Let the lamb rest for about 10 minutes before carving. Serve the roast lamb with the crispy potatoes alongside.
Optional Gravy: If desired, you can make a simple gravy using the pan drippings. Deglaze the air fryer basket with a little water or broth, then transfer the liquid to a saucepan. Bring to a simmer and thicken with a cornstarch slurry (mix cornstarch with a little water) until desired consistency is reached. Adjust seasoning if needed.

Let's start by putting a frying pan over the fire
Cut the garlic very thin
Add a drizzle of olive oil to the skillet
Add the garlic and let the garlic fry a little
Add the thinly sliced onion
Cut very thin as possible the red onion and add to frying pan
To add some heat to the pasta we add some chilli
Add the cherry tomato cut in halves to the pan
Add spaghetti
Add the vegetable broth
Let it boil and let it cook for 1 minutes less than the instructions in the pasta package
Add the homemade tomato sauce and give it a good stir
Add some basil
Stir a little and add the salt and let the salt melt
Transfer the pasta to a plate and garnish some basil and Parmesan cheese

Let's start by slice the potatoes with a thickness of about 1 cm
Put the potatoes in a frying pan you can use a cooking pot it makes no difference
Add some seasoning (Salt, Pepper and the oregano) to those potatoes
Add the milk
Put the potatoes on medium heat, preferably covered and we will let them cook, this will take about 10 minutes
Transfer the potatoes to an oven dish (this step is optional)

Let's start by cooking some pasta, so we will have to have a pan with boiling water and already seasoned with 1 Tbsp Salt
Put the paste in then pan and give the penne a stir so that it does not stick and let it cook for 3 minutes less than the instructions in the penne package
The penne should be still firm
Drain the penne pasta, add reserve some the water of cooking the pasta
To prevent the penne from sticking together we will use a little olive oil (1 Tsp)
Stir well
In a pan over medium heat put a little extra virgin olive oil
Chop some very finely chopped garlic cloves and add to the pan and sauté until fragrant, 30 seconds
Chop a medium onion well and add to the pan and cook until the onion is translucent
Add homemade tomato sauce to the onion and garlic
Boil a little so that the flavors of onion and garlic are infused in tomato sauce
Add the pasta cooking water (this water is essential to make a creamy and tasty sauce)
Add the pre-cooked pasta
To finish we’ll use a little salt and black pepper to bring some heat to the plate
Give it a good stir and it's almost done
Garnish this pasta with ricotta cheese and fresh basil

This tomato sauce family recipe is very easy, healthy and very versatile to use in pasta, lasagna, pizza or whatever you want.

Let's start by styling the jars for the sauce. In this way, it is possible to store the tomato sauce in properly sterilized pots outside the freezer. I keep it in the pantry.
Let's start by peeling the tomatoes, for that we will make a cross cut in the tomatoes
Put a pan on the stove with water and bring to a boil.
Put the tomatoes in boiling water, this make it easier to remove the skin. A few seconds is sufficient.
Remove the tomatoes out of the water and set them aside in a bowl. Remove all the peel of the tomatoes, and then with the help of a wand remove everything.
With the help of a colander, now we will separate the seeds from the tomato pulp (It is very important to remove the seeds from the tomatoes because they add bitterness to the sauce.)
To remove the acidity of the tomato we will use fennel and cinnamon this is the secret of the Italian tomato sauce
Cook for about 45 min over medium / high heat without the lid to allow the water to evaporate but don't forget to stir them frequently.
Bring to a boil and add salt
Let this sauce simmer for another five minutes
Now we are going to put the sauce in the bottles that have been sterilized.
Adding the basil now will allow it to release its aroma into the sauce. (It must be at this point that the basil, because if it had been added before, we would have lost all its aroma during the boiling of the sauce)
Now we are going to take the filled and tightly closed pots in a pot of water up to about 2/3 the height of the pots.
Once the water starts to boil, count 10 to 15 minutes.
Now we are going to remove the pots from the pan and store in the pantry or cupboard to use when necessary.

Ingredients for Broccoli Cheddar Soup
3 tbsp Butter
1/2 onion diced
2 minced garlic
1/2 cup carrot
3 tbsp flour
2 cups broccoli
2 cups chicken broth
2 cups half & half
2 cup cheddar
2 tsp salt
1 tsp pepper
1/2 cayenne
Preparation
In a large pot, combine butter and onion and sauté until translucent. Mix in the salt, pepper, and cayenne.
Add garlic, flour, and carrot on medium heat until mixture lightly browns.
Add the veggie or chicken stock and simmer on low heat for 5-10 minutes.
Mix in the broccoli simmer on low heat for 10-15 minutes.
Stir in the half-and-half and mix until contents reach a simmer.
Add the cheddar cheese and stir until cheese is melted and combines with other ingredients.

How To Make Milk Foam 3 Ways Step By Step WITHOUT An Espresso Machine
You will need:
Milk (Preferably Full Cream Milk)
A Jar, French Press or Frothing Wand
Steps:
To Make Milk Foam with a Jar:
Grab a decently sized jar and fill it with milk. Make sure you don’t fill more than half the jar with milk as you will need some space in the jar to make the foam.
Seal the jar tightly and shake it up and down for 30 to 60 seconds.
Once done, remove the jar lid and place the jar in a microwave. If your jar is not microwave safe, pour the milk into a microwave safe cup or bowl.
Heat the milk in 10 second intervals till you reach your desired temperature.
Your milk foam is now ready to be served with your coffee or tea.
To Make Milk Foam with a French Press:
Grab a French press and fill it with milk. Make sure you don’t fill more than half the French press with milk as you will need some space in the jar to make the foam.
Cover the French press with the plunger and start pumping the milk slowly until you develop a nice layer of foam in the French press.
Once done, transfer the milk into a microwave safe cup or bowl (if necessary).
Heat the milk in 10 second intervals till you reach your desired temperature.
Your milk foam is now ready to be served with your coffee or tea.
To Make Milk Foam with a Frothing Wand:
Grab a decently sized jar or cup and fill it with milk. Make sure you don’t fill more than half the jar with milk as you will need some space in the jar or cup to make the foam.
Dip half of the tip of your frothing wand into the surface of the milk. Turn on the frothing wand and let the wand churn the surface milk for 30 to 60 seconds. Thereafter, dip the hand of the frothing wand into the milk and let it churn the milk for another 10 to 20 seconds.
Once done, transfer the milk into a microwave safe cup or bowl (if necessary).
Heat the milk in 10 second intervals till you reach your desired temperature.
Your milk foam is now ready to be served with your coffee or tea.

Hot and Spicy Artichoke Dip
14 oz. artichoke hearts, diced
1 c. mayonnaise
1 c. grated Parmesan cheese
1 (4 oz.) can chopped green chilies, drained
1 garlic clove, minced
2 tbsp. sliced green onion
2 tbsp. chopped tomato
Heat oven to 350 degrees. Mix all ingredients except onion and tomato. Spoon into 9-inch pie plate. Bake 20-25 minutes or until lightly browned. Sprinkle with onions and tomatoes. Serve with tortilla chips, crackers or pita bread wedges. Makes 2 1/2 cups.

Grilled Thighs and Drumsticks
Ingredients 2 1/2 cups packed brown sugar
2 cups water
2 cups cider vinegar
2 cups ketchup
1 cup vegetable oil
4 tablespoons salt
3 tablespoons prepared mustard
4 1/2 teaspoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon pepper
1/8 teaspoon liquid smoke (optional)
10 pounds chicken thighs and drumsticks
1/2 teaspoon seasoned salt
Directions In a large bowl, combine the first 11 ingredients. Pour into two large resealable plastic bags; add chicken. Seal bags and turn to coat; refrigerate overnight. Prepare grill for indirect heat. Drain and discard marinade. Sprinkle chicken with seasoned salt. Grill chicken skin side down, covered, over indirect medium heat for 15 minutes. Turn; grill 15-20 minutes longer or until juices run clear.

Also, I'd like to apologize for being a couple of days late. I have a very sick little boy who is requiring all of my attention right now.
Garlicky Roasted Chickpeas (Garbanzo Beans) with Feta, Mint, and Lemon
2 cans (15 oz. can) chickpeas (also called garbanzo beans), rinsed and drained
2 T olive oil (recipe called for 3 T which I thought was too much)
2 fresh garlic cloves, finely minced (I would not use garlic from a jar for this recipe)
1/8 tsp. red pepper flakes
salt and fresh ground black pepper to taste
3/4 - 1 cup crumbled Feta (recipe called for 1 cup; I thought 3/4 cup was plenty)
1/2 - 3/4 cup chopped fresh mint (recipe called for 1/2 cup but I used 3/4 cup)
lemon wedges to squeeze over finished dish (optional, but good)
Preheat oven to 375F/190C. Dump chickpeas into a colander placed in the sink and rinse with cold water until no more foam appears. Let chickpeas drain at least 5 minutes. (You can pat them dry with paper towels if they still seem wet after that.) Mix together the olive oil, finely minced garlic, red pepper flakes, salt, and fresh ground black pepper. Spray a large rectangular baking dish with nonstick spray (11 X 7 or slightly larger). Put drained chickpeas into baking dish, add olive oil mixture and stir until the chickpeas are well coated with oil, then put in the oven and roast 15-18 minutes. While chickpeas are roasting, wash mint, spin dry or dry with paper towels, and finely chop with large chef's knife. Crumble Feta. Start to check chickpeas after 15 minutes, and as soon as they are hot and barely beginning to crisp on top remove from oven. Spoon chickpeas into a serving dish. (Use a slotted spoon if there is any unabsorbed oil in the bottom of the baking dish, so the extra oil will be left behind.) Let chickpeas cool 5 minutes, then stir in crumbled Feta and chopped mint. Season with more salt and fresh ground black pepper if desired. Serve warm, with lemon wedges to squeeze over the finished dish if desired.

Greetings everyone! As new mod on here I'd like to get things going again. Since things have been a bit slow lately in r/recipeclub, we'll be straying a bit from the usual Recipe of the Week format at first.
Starting today, I'd like your input on categories (chicken, veggie, casserole, dessert, etc.) for upcoming RotW submissions. I will try to organize these category suggestions & create some sort of calendar so that we can keep up with what type of recipes we will be submitting each week. This way, we can plan ahead & search for that perfect recipe to post! :) On Wednesday, January 18th I will announce a category & ask for recipe submissions. All submissions must be submitted by midnight on Friday, January 20th. Voting begins then, and the recipe with the most votes will be announced by midnight on Sunday. I will try to choose only one recipe with the highest votes, but obviously there may be a tie-breaker voting session. After this initial "get things going again" stage, we will continue this format each week. Categories will be chosen & posted ahead of time. I will remind you guys of the category in advance, then recipe submissions will need to be posted by midnight on Fridays, with voting beginning then & ending midnight Sunday. During the week, there will be the usual discussion format & I encourage everyone to try the winning recipe(s) and post your thoughts, pics, and your opinions.
I hope this will be a fun way to try new dishes and compare our different cooking styles! If you have any suggestions, please post here or feel free to message me or comment on this thread.
Also, please be patient with me as a new mod (no small feat, especially among redditors!) I am obviously new to this, and would sincerely value any input you guys have.
