Faux risotto using cocktail shrimp instead of rice.

"I'm traveling down the road and I'm flirtin' with disaster". Molly Hatchet gets my blood pumping as I start dinner. Skinny konjac noodles in a hot skillet to cook off the moisture. Once they are pretty dry, I add salt, pepper and some Italian seasoning along with a pat of butter. Cover and set on low. Get the cajun seasoning out of the cabinet and fire up the grill. When I come back in, The Boss is singing,
"The highway's jammed with broken heroes
On a last chance power drive
Everybody's out on the run tonight
But there's no place left to hide"
I put the chicken breast on the grill for 1 minute, sprinkle it with a butt ton of cajun season, then turn over the chicken. Set a timer for 5 minutes and head back inside.

George Jones tears out my heart.
I turn on the oven to 450 degrees then stir the "noodles".
"Ooh You can dance
You can jive

Abba makes me want to wear genuine imported polyester and bell bottom pants.
Stir the noodles then go out and turn the chicken. Add a bit more cajun seasoning because...well because it is tastee. Come back inside and open the fridge and get the HEB organics Italian dressing. Get the head of lettuce out, and pull apart 161 grams. Plate it and add some season salt.
Ray Charles and Willie Nelson:

Only those two could make a gospel/soul/country song be so beautiful.
Take the chicken off the grill and come back inside. Put the chicken in a pie pan and add 3 tablespoons of Mutti pizza sauce, then sprinkle some mozzarella on top and put in the oven for 8 minutes. Van Morrison is in love:

I pour a big glass of cherry blackberry flavored ketoade then set the table. Back in the kitchen, I grab that bottle of Italian dressing and do my KC and The Sunshine Band impression:

You gotta get those spices all mixed up. The timer goes off on the stove and I pull out the chicken. Johnny Cash...Yippie yi ooh...

The chicken smells amazing. I plate the noodles, then put the mozzarella chicken on top. Take my plate to the table and sit down.
And as I eat it, Frank Sinatra describes my evening perfectly:

The base is mozzarella cheese and the toppings are guacamole, eggs and corned beef. So yummy!
I forgot how good the Habit is and how good they are at lettuce wraps.

Heat tajine bottom on medium heat, about 4-1/2 on my electric stove (1=simmer, 2,3,4,5,6, 7=high). When it's hot enough for a sizzle, but not too hot, add ghee. When it's melted, wait about a minute then add steak. Cover with the tajine top and let cook for 10 minutes. Uncover, turn the steak over, spoon ghee over it several times, re-cover and turn the heat down to about 2-1/2. Let cook for another 10 minutes. Turn heat off and leave in covered tajine for about 2-3 minutes. Then uncover and serve. It came out medium with a little pink in the middle, tender and yummy! 😋
This tajine is great! What I like about it is that you can unscrew the handle on the top, leaving a small hole for steam to escape if you're making a dish that will produce a lot of liquid. I got it here on Amazon: https://www.amazon.com/gp/product/B0811BNBDC/
