Does anyone happen to know what the variety cross is to breed dwarf fairytale eggplant hybrid? I can’t imagine that all the distributors that sell the seed are getting it all from the same place.

Many people run away from eggplants due to unfortunate experiences with oily and insipid eggplant dishes. In my new Substack post (click here), I wrote a bit about why this happens and how to prevent it. Also, I give suggestions for a great way of cooking eggplants: eggplant dips. The eggplant is grilled until smoky and then pureed to work as a vessel for interesting flavours and eaten with flatbread.

I plan to sauté slices in olive oil and then bake them with roasted red pepper, red onion, mushrooms, fresh oregano, smothered in mozzarella and pecorino. Will drizzle with thick balsamic vinegar before serving.
