I grew up in Louisiana, where there is a strong, Lebanese presence and wonderful Greek & Lebanese restaurants. One restaurant, Albasha’s, has fantabulous salad dressing for their chicken Shawarma salad… I have no idea what’s in it. It’s like a yogurt base there are large and smaller chunks of some kind of green in it. It separates if it’s left in the refrigerator with the water sinking to the bottom and a fluffier consistency of the yogurty? portion. It is white and tangy. I know it is not tuom or tzatziki (I have mastered these)... It has no cucumber in it and to my taste, no mint.
I adore this sauce… when I was pregnant I literally dreamed about it over a month of nights per pregnancy only to wake up and discover I can’t have it. I tortures me (I am not even being all that dramatic here.) When I fly home… I immediately procure it the moment I can 😅
I have driven hours around my location in Virginia to attempt to find a local-ish restaurant that has it over the past 3 years (and even asked questions when they do not have it to attempt to track it down.)
I have asked alabashas… they will not tell me (unless I work for them but kind of difficult considering I live in Virginia and they are in Louisiana…)
