The fastest I've seen someone break down a chicken, 10 seconds, with a nakiri. One slice down the keel, and a second down the ribs and the breast were off. Cleanest carcass I've ever seen. Is it typical to use a nakiri for this? (Very seasoned cook that works at the chicken shop next to us)
